Light Crepes

1/4 Cup White Flour 1/4 Cup Whole Wheat Flour 1/4 tsp Salt1/2 tsp Baking Powder1 1/3 tsp Powdered Sugar2 egg whites - Beaten1/2 Cup Milk 1%1/4 tsp Vanilla
1. Sift and mix the dry ingredients and make a well.
2. Mix the remaining ingredients in a separate small bowl.
3. Combine the dry and wet ingredients and mix well. (I added a tad more milk than the recipe called for after mixing, but it's really your preference)
4. Cover and refrigerate for 30 minutes
5. Spoon out small amount onto a hot pan (medium) and roll the batter around in the pan until it spreads evenly and thin. When the edges start to curl, it's ready to flip.
6. Fill with your favorite toppings, and serve.
These are good as a dessert crepe or I often fill them with Chicken & mushroom sauce. Mmmmmm!
