Ingredients
0.5 cup, cubes Sweet potato Almonds – 1/2 Cup ( with or without skin)Coconut – 1 Cup gratedOrganic Raw Sugar – 3/4 Cup + 2 tbsn for rolling cookiesEgg white – from 1 eggVanilla essence – 1/2 TspSalt – a pinch
Directions
oast the grated coconut in a wide pan till light golden. Remove from pan and keep aside.
Pulse the almonds coarsely.
In a bowl, take all ingredients and mix it to a mass.
Cover it and chill in refrigerator for 1 hour to 2 days.
Remove from the refrigerator,scoop in a tablespoon. Roll the top in sugar.
Place it in parchment paper laid cookie pan.
Bake in a preheated oven at 325 deg F for 25 minutes.
The cookies will be crusty outside and soft ,chewy inside.
