Bottom Round Roast with Vegetables and Brown Gravy

Ingredients
2 lbs. beef bottom round roast (rump roast) 2 large sweet bell peppers (your color choice!), seeded, chopped into 1" pieces2 medium onions, cut into 6 pieces each 1 lb. baby carrots 1 1/2 lbs miniature potatoes (yellow, red, or mixed colors) 8 oz. Baby Bella mushrooms 2-0.87 oz envelopes of dry brown gravy mix2 tsp. Adobo Seasoning w/Pepper2 cup fat free, 50% less sodium beef broth
Directions
1. Place roast in the bottom of the crock pot.
2. Cut up the peppers and onions and leave other vegetables as they are.
3. Place all vegetables in the crock pot, add brown gravy mix and the beef broth.
4. Cover and turn on crock pot to high. Cook until the meat is tender.

    Thanks, EvilCecil! Unfortunately when I made this last night I forgot to turn off the crock pot when I went to bed. It cooked for 14 hours on high! However, though it had less liquid, the roast had this wonderful smokey flavor! Not burnt, but smokey. Good eatin', 'twas indeed!
