4 large Egg, fresh, whole, raw 1 tbsp Nutmeg, ground 1 tsp Vanilla Extract 2 cup Fat free half and half 8 oz 8th Continent Light Vanilla Soy Milk 16 serving Truvia Natural Sweetener 8 oz Alcoholic Beverage (gin, rum, vodka) 86 proof .34 cup Maple Syrup
22 servings of Truvia is 12 tsp or 1/4 cup.
Whisk egg yolks, maple syrup, nutmeg, and extracts together. Bring both cream & milk together to bare simmer. Slowly add warm milk to egg yolks. Return to low heat. Heat for about 5-10 minutes to thicken slightly. Remove from heat. Cool outside because it's 14º (or in refrigerator). Add Brandy or Whiskey (I used Maker's Mark). & Truvia when eggnog is somewhat cool.
Whisk egg whites to peaks. Fold into cooled Eggnog. Sprinkle with fresh ground nutmeg.
