2 cup (8 fl oz) Water, tap 1 cup 365 Organic Quinoa 1 serving Grape Tomatoes (3oz/12 tomatoes) 2 cup English cucumber (by MIS2101) 0.25 cup, chopped Onions, raw 3 serving Mezzetta Pitted Greek Kalamata Olives (4 olives in a serving) 1 serving Lemon, fresh squeezed, juice of one whole lemon 2 1tsp Olive Oil 4 oz Feta Cheese 1 tsp Salt - Table - 1 tsp. (by MIKNMEG) 1 dash Pepper, black
combine water, 1 t salt, quinoa in pot boil then simmer covered for 15 min. Leave covered for 5 min off heat, then fluff with fork and let cool.
Combine lemon juice with olive oil.
Add quinoa to vegetables, sprinkle with oil and combine,
Add feta and salt and Pepper and combine.
Serving Size: heaping cup/makes 6 servings
