Vegetarian Stuffed Pepper Casserole

1.0 cup Bob's Red Mill TVP1.0 medium (2-1/2" dia) Onions, raw6.0 serving 1 Med. Green Bell Pepper4.0 clove Garlic6.0 serving(s) meijer mushroom pasta sauce2.0 cup Brown Rice, medium grain1.0 cup mozzarella and provolone shredded cheese
Reconstitute TVP in water or low sodium broth. Saute onion. Combine the rest of the ingredients except the cheese and put into a casserole sprayed with cooking spray. Cover with aluminum foil and bake in a preheated 350° oven for 25 to 30 minutes. Remove foil and top with cheese. Pop back into the oven until melted. Let cool 15 minutes before serving.
