Veggie Chilli

Ingredients
1 1tsp Olive Oil 1 medium (2-1/2" dia) Onions, raw 3 clove Garlic 2 cup slices Parsnips 3 cup, cubes Butternut Squash 1 tsp Paprika 2 tsp Oregano, ground 2 tsp Cumin (ground) (by IVORYGRL1) .25 tsp Allspice 1.5 tsp Chipotle Chili Powder (by SMARTIEBEE) 2.25 cup GV White Kidney Beans 540 ml 4 tbsp Cilantro, dried 4 cup Vegetable Broth
Directions
saute onion in oil then add garlic
stir in parsnips, squash and spices (season with salt to taste)
cover - cook 20 minutes
stir in beans, cilantro and broth
cook - uncovered 15 minutes
serve
