Curried Pumpkin Soup

Ingredients
3.0 tsp Ginger Root1.0 1tsp Grapeseed Oil4.0 cup, mashed Pumpkin, cooked1.0 cup, chopped Onions, raw2.0 tbsp Madras Curry Paste1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)2.0 tsp Salt2.0 cup (8 fl oz) Water, tap
Directions
Saute onion in oil until translucent, all curry paste, garlic and ginger. Cook another minute. Add pumpkin, water and coconut milk. Simmer for 15 minutes and add salt to taste.
