Baked Potatoe Soup

Ingredients
3 slices bacon1/4 cup flour3 tablspoons minced shallots4 baked potatoes4 cups 2% milk
Directions
ither bake or microwave your potatoes. When a little cool, remove skin and mash with a fork, leeaving in medium size pieces. Chop bacon in small pieces and place in skillet. Add shallots while bacon is frying. If not enough drippings add a little bit of butter. When bacon and shallots are cooked add the flour and stir until bubbly. Add the milk and cook until thickened. Add the potatoes and continue to heat through. Season with salt and pepper to taste.
Makes 4 - 1 cup servings

    I love baked potato soup on a chilly day. Made it with my low fat soy milk(lactose intolerant) and added a few of my favorite spices, garlic, parsley,celery salt. Delicious! I ommitted the bacon and added veg. stock for meatless Monday. - 10/31/11
