Ingredients
1 c. canned pumpkin1 c. sugar1/2 c. milk2 eggs1/4 c. canola oil1/2 c. white flour1/2 c. whole wheat flour1/4 c. oats1/4 c. cornmeal2 tsp. baking powder1/2 tsp. nutmeg1/2 tsp. ground ginger1 c. chopped walnuts1 c. dried cranberries
Directions
In bowl or mixer, beat pumpkin, sugar, milk, eggs and oil. Combine dry ingredients and add to pumpkin mixture. Fold in walnuts and cranberries. Pour into a greased 9x5x3-inch loaf pan or divide among muffin tins. Bake at 350° for one hour (20 minutes for muffins) until a toothpick inserted in center comes out clean. Makes one loaf, 12 slices.

    Absolutely delicious- I love the walnut taste. YUM! Be aware- its one cup of pumpkin, NOT one can. I made that mistake the first time & it was too moist. - 11/10/08

    Love the mixed grains, but found the recipe slightly sweeter than my taste. I used fresh cranberries rather than dried, and added an extra tablespoon of flour to deal with that--maybe next time add 2T more flour and decrease sugar by 2T. - 12/4/10
