48 oz Great Value Beef Broth (by GRNIIZ1979) 11.5 oz Juice, V8 Vegetable Juice, Low Sodium - 1 Can 11.5 Fl. Oz. 1.75 cup Del Monte Petite Cut Diced Tomatoes 1 medium (2-1/2" dia) Onions, raw 1.5 cup, pieces or slices Mushrooms, fresh 2 cup, sliced Zucchini 3 medium Carrots, raw 3 stalk, medium (7-1/2" - 8" lon Celery, raw 3 cup, chopped Cabbage, fresh 1 cup Beans, red kidney 1 tbsp Extra Virgin Olive Oil 3 tsp Garlic Minced (by MASHELDON)
Heat olive oil in the bottom of a Dutch oven or other large pot. Saute diced onions, diced carrots and diced celery in oil until softened. Add garlic and cook an additional 2 minutes, stirring frequently. Add beef broth, canned tomatoes (including juice) and V8 juice. Add the remaining vegetables and drained kidney beans. Simmer about an hour and season to taste.
