Ingredients
3 Chicken breasts chopped1tsp Olive Oil1 carrot chopped1/2c green pepper chopped1 Small onion diced1 15.5oz Can of Blackeye Peas1/2c Fresh Parsely chopped1 Jalapeno pepper seeded and choppedSeason with rosemary, majoram, cummin, hot paprika, chilli powder, salt and pepper to taste.
Directions
Cook chicken. Add raw veggies and beans cook until tender. Add jalapeno and seasoning to taste and simmer for 5-10min. Serve over brown rice.
