Whole Wheat/ Wheat germ Blueberry Muffins

Ingredients
1 cup whole wheat flour1 cup raw wheat germ1/2 cup sugar4 tsp baking powder 1/2 tsp salt1 egg3/4 cup milk1/3 cup unsweetened applesauce3/4 cup blueberries
Directions
Preheat oven to 350 degrees.
Stir together dry ingredients in a large bowl. In a different bowl mix together egg, milk, and applesauce, then add to the dry ingredients and mix lightly. Gently fold in bluberries.
Spray a muffin tin with non-stick cooking spray, and fill cups about 2/3- 3/4 full. bake at 350 degrees for 20- 25 minutes until edges are brown and muffin tops bounce back when pressed lightly.
Makes 12 muffins.

    Excellant recipe. I used Wheat Germ with cinnamon and milled flax seed. Gave them just a hint of cinnamon flavor. When I make them again I think I will add some cinnamon. - 7/18/10

    I changed the receipt by using 1c of unbleached flour & 1c whole
    wheat pastry flour, 3/4c wheat germ, 1/2c oat bran, 2 grated apples & added 1tsp of baking soda, 2/3 c agave. The rest is the same. (Doubled receive). It turned out fantastic! - 3/7/13
