Strawberry banana custard

1 medium (7" to 7-7/8" long) Banana, fresh 1 tsp Vanilla Extract 2 large Egg, fresh, whole, raw 3 medium (1-1/4" dia) Strawberries, fresh
Preheat oven 375. Spray muffin pan with nonstick spray.
Smash banana, add eggs and vanilla, beat well. Add cut up strawberries to bottom and pour mixture in each muffin hole. Give a little stir. Bake 12-14 minutes. Cool 5 minutes and with a offset spatula go around the edges to loosen and remove.
Any fruit, fresh or frozen can be added.
