Wash potatoes, dry then rub with olive oil and kosher salt, bake at 400 for 1 hr
Cut onion and peppers and saute in olive oil, cut meat into strip and add to veggies
One potatoes are cooled cut in half and scoop out some of the inside to m as kept room for veggies and meat. Put some shredded mozarella in bottom, layer veg mix on top then cover it all with provolone. Put back in oven to allow cheese to melt.
