Lemon Souffle Pancakes

Ingredients
0.25 cup Butter, salted0.25 cup Wheat flour, white, all-purpose, enriched, calcium-fortified3.0 large Egg, fresh, whole, raw0.25 tsp Salt0.75 cup (not packed) Cottage Cheese, Nonfat0.25 cup Granulated Sugar1.0 tbsp Lemon Peel
Directions
Beat egg whites until stiff slowly adding the sugar. Beat butter, egg yolks, salt, lemon zest and cottage cheese. Fold in flour. Fold in egg whites. Spread in 3 inch circles on hit griddle. Turn gently, cooking until golden brown on both sides.
