20 oz 93% Lean Ground Beef 2 clove Garlic,minced 1-15 oz. can of Tomato Sauce1-15 oz. can of Diced Tomatoes1/2 medium (2-1/2" dia.) Onion, chopped 4 small (5" long) stalks of Celery, chopped1/2 Red Bell Pepper, chopped1/2 Green Bell Pepper, chopped 2 tsp Chili powder 1 tsp ground Cumin 3/4 tsp Garlic powder 1/2 tsp Seasoned Salt1/4 tsp ground Black Pepper 1/2 tsp Dried Oregano 1/2 tsp ground Cayenne Pepper 1-15 oz can of Dark Red Kidney Beans 1/4 cup Polenta (Corn Grits)1 tsp Olive Oil
1. In a Dutch oven or large pot, sauté chopped garlic for about 1-2 minutes.
2. Add to the sautéed garlic, ground beef, chili powder, cumin, garlic powder, salt, pepper, oregano, and cayenne pepper and mix well. Cook over medium high heat until evenly browned.
3. Add chopped vegetables, can of red beans, tomato sauce, diced tomatoes and corn grits. Mix well and bring to a boil.
4. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally. If necessary, add a little water and simmer until vegetables are softened.
5. Makes 8 cups of chili
