1 head, large (6-7" dia) Cauliflower, raw 1 cup, chopped Onions, raw 8 cup (8 fl oz) Chicken Broth 1 tsp Pepper, black 16 fl oz Heavy Whipping Cream 32 oz Cheddar Cheese 3 cup, diced Ham, regular (11% fat)
Chop the cauliflower into smaller pieces and dice 1 whole onion. Add both to 2 qts of chicken broth and cook until the cauliflower is soft. Once it is soft use a potato masher to blend the cauliflower into the broth better. Add the pepper, cream and cheese and cook until melted. Do not cook too long after adding the cream or it will develop a curdled look from the dairy.
