Oven Fried Ranch Chicken

Ingredients
3 1/2 lbs legs & thighs (chicken) 1 (2-oz) envelope ranch dressing mix 2 cups buttermilk 1 pkg. Jiffy corn muffin mix 1 tsp. paprika 1 tsp. pepper 1 tsp. Lawry's seasoned salt 1/8 tsp. cayenne (red) pepper
Directions
In large bowl, combine chicken pieces, buttermilk and ranch dressing mix. Refrigerate at least 1 hour or overnight.

Heat oven to 425F and spray cookie sheet or large baking pan with non-stick cooking spray. Mix remaining dry ingredients and dip chicken one at a time. Lay pieces on baking sheet, bone side down.

Bake for 35-40 minutes.
