Broccoli Tortellini Salad

Ingredients
2 cups Broccoli florets1 9 oz pkg refrigerated cheese tortellini1/3 cup Finely chopped red onion1/8 cup Raisins3 tbsp Reduced-fat mayonnaise1 tsp Sugar 1/2 tbsp Cider vinegar
Directions
In a large saucepan, cook broccoli in 6 cups boiling water for 2 minutes. Drain and immediately rinse in cold water. In the same saucepan, cook tortellini according to package directions. Drain and immediately rinse in cold water.
In a large bowl, combine the red onion, raisins, broccoli and tortellini. Combine the mayonnaise, sugar and vinegar. Pour over tortellini mixture; toss to coat. Refrigerate for at least 1 hour. If desired, just before serving, you can stir in 1/4 cup sunflower kernels.

    We had it for the 4th of July picnic meal! It was very very delicious. I used craisins instead of raisins, and it was perfect. I think you could add shredded carrots or water chesnuts (for crunch) or any veggie you like and it would still be great! - 7/4/10
