Stuffed Zuchini

Ingredients
2 Medium Summer Squash (zuchini)1/8 cup margarine, melted1/4 cup Parmesan cheese, grated1/4 cup bread crumbs, seasoned
Directions
Wash the zuchini and slice in half lengthwise. Using a spoon, or the sharp side of a Church Key can opener, scrape out the insides, setting aside, leaving a shell.

Combine the insides of the zuchini and all of the other ingredients. Stuff back into the shells.

Heat in the oven at 350 F/180 C until brown and zuchini is cooked through.

    Very good... I made a few changes. I added some dill paste and garlic to jazz it up and my husband really thought it was great. You can also cut the zuchinni into pieces (half of each half) to use as a side vegetable together with other veggies. Very tasty and easy to prepare. - 8/4/09
