1.0 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry1.0 serving cucumber peeled, raw 1/2 cucumber1.0 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips74.0 gram(s) bell pepper, red, sweet, raw0.25 cup, chopped Onions, raw0.75 cup Athenian feta cheese traditional2 cups Spinach, fresh1.0 cup Tomatoes - sm cherry tomatoes0.15 grams Cilantro, raw3.0 tbsp Vinegar - Natural Rice Vinegar (Nakano)1.0 tbsp Olive Oil0.75 fruit (2" dia) Limes0.25 tsp Salt0.35 tsp Pepper, black0.3 tsp Garlic powder
Cook one cup of quinoa and cool.
Cut tomatoes in half and squeeze out contents and reserve in small bowl.
Chop all veggies in to small pieces.
To the reserve tomatoe juice add spices, vinegar, lime juice, blend, pour over veggies and toss.
Add cool quinoa to veggies and toss.
Add crumbled feta, toss.
Refrigerate in air tight container.
Add more oil if you desire.
