Keto Broccoli Cheese Soup

1 cup, chopped Broccoli, cooked 5 oz Cheddar Cheese 2 tbsp Butter, salted .12 tbsp Xanthan Gum - Bob's Red Mill (by CEELEE53) 2 serving Onions, yellow, raw 1 oz. 4 tbsp Celery, raw 1.5 cup (8 fl oz) Chicken Broth 4 fl oz Heavy Whipping Cream
1. Cut up broccoli, set aside.
2. Add butter, onion, celery, salt/pepper to saucepan and cook until translucent.
3. Add broccoli and cook additional 2-3 minutes.
4. Add chicken broth and heavy cream and bring to a boil.
5. Reduce heat to a simmer and slowly add the cheese a bit at a time.
6. Once all of the cheese is incororated add the xanthan gum and stir until soup thickens.
7. Serve warm and enjoy.
