Ingredients
16 oz *93% Lean ground beef 1 medium (2-1/2" dia) Onions, raw 2.7 gram(s) Mahatma Extra Long Grain Enriched White Rice, 45g/.25 cup raw uncooked, .75 cup cooked 1.75 cup Great Value Diced Tomatoes with Green Chilies Mild (by LUV-BEING-NANA) 2 cup Black beans, canned, Great Value (by DAYSEY) 1 cup Mexican Blend Cheese - Great Value Fiest Blend Fancy Shredded 2.5 cup Beef broth, bouillon, consomme 1 tsp Cumin - ground (1 tsp) (by INFORM555) 1 tsp Salt .25 tsp Pepper, black 1 pepper Jalapeno Peppers
Directions
1. Before we get started, chop your Onion. Then cut the Jalapeno in half, remove the seeds and finely chop and drain and rinse the beans.
2. In a large skillet, cook the beef, onion and jalapeno over medium heat until the meat is no longer pink and the vegetables are tender, breaking up the beef into crumbles, 8 - 10 minutes. Then drain any grease.
2.Add the rice, tomatoes, beans, broth, and seasonings. Bring to a boil, then reduce heat. Simmer, covered, until liquid is absorbed, about 15 - 18 minutes (add hot water in needed). When rice is done, fluff it with a fork. Remove from heat; sprinkle with cheese. let stand, covered, until cheese is melted.
