Green Chicken Enchilada Casserole

5.0 serving "Great Value" Cheese, Fiesta Blend (1/3 cup)10.0 serving Cacique - Queso Fresco Part Skim8.0 serving Tortilla Land Flour Tortilla (47g per tortilla/serv)61.0 gram Guacamole Salsa, Herdez 31g= 2 Tbsp10.0 oz Enchilada Sauce, green, Las Palmas2.0 cup Chunk Chicken Breast by Member's Mark
Crumble Queso fresco and put into a bowl. Add shredded cheese and mix together. Set aside 1/2 c for top.
Shred can chicken breast with fork into small bowl. Season chicken with just enough of Guacamole salsa to moisten. Set aside.
Place the rest of Guacamole salsa onto bottom of 2.5 qt. rectangular glass casserole.
Place 2 tortillas atop sauce.
Add a layer of chicken and cheeses.
Continue creating layers, ending with 2 tortillas on top.
Pour enchilada sauce over the top.
Add last 1/2 cup of cheeses.
Top with chopped green onions.
Bake at 375° for 30 minutes or until bubbly.
Cut into 8 squares, top with chopped tomatoes, a tsp of plain yogurt, and enjoy!
