Fiesta corn

1 (can) any kind of corn 1 tsp. crushed red pepper1 tsp. cilantro or basil flakes1 1/2 tsp. salt
Put the canned corn into a small size pot and place over medium heat.
Immediately add the crushed red pepper and the cilantro or basil and continue to cook until corn is just about to boil. (about 8-10 minutes)
Using a fine/ metal screen strainer, drain the excess water out of the corn, but retain as much of the red pepper and herbs as you can.
Put the drained corn into a bowl and add the salt, mix well and serve.
Makes about 4, 1/2-cup servings.
