Arroz Guisado (Spanish Rice)

3 cups of White Rice, medium grain3 cups of water 1 tbsp. of Tomato Sauce1/2 of a cube of Knorr Chicken Flavor Bouillon1 packet of Sazon Goya (with Coriander and Annatto)2 tbsp. Extra Light Olive Oil1 tbsp. Sofrito1 tbsp. Garlic (chopped)
Makes 3 (1 cup servings):
Pour 2 tbsp. of extra light olive oil to heat in a caldero (cauldron) on the stove on medium heat. Mix in the tomato sauce, sofrito, garlic, chicken bouillon, sazon and other spices (optional). Fry these ingredients lightly (in spanish: sofreir) for about 1-2 minutes.
Pour in the 3 cups of water and mix. Taste for salt, and add some if needed. Mix in the 3 cups of white rice and mix again.
Let rice cook on medium heat for about 15 minutes or until you can see little holes on the top. Mix the rice again, from bottom to top and lower the heat to low. Cover with lid and let cook for about 15 minutes more. Check on the rice and it should be cooked and soft. If rice is still a bit hard, you can moisten a napkin and place it on top of the rice and cover. You may also add a bit more water, mix and allowing the rice to cook for another 5 minutes after covering with lid.

This was good! I made it per the recipe except jasmine instead of white, tossed in a bunch of seasoned black beans with "Metalfinger2u"'s pico de gallo and lettuce leaf wraps. It was so good. My picky husband is taking leftovers to lunch tomorrow. That doesn't happen! I'll add more veg next time! - 6/20/17
