MLT Chicken, Mushroom, and Brussels Sprouts Soup

Ingredients
26.08 oz *POULTRY (FRESH) - Chicken Thigh, Boneless, Skinless, raw - Kirkland (by MALAKIA63) 380 grams Onions, raw 2 tbsp Extra Virgin Olive Oil 227 grams Mushrooms, fresh 4 cup Imagine Fat Free Chicken Bone broth (by BABBSY15) 4 serving Birds Eye Cauliflower Rice (3/4 C / 82g) 340 grams Brussels sprouts, fresh 2 cup (8 fl oz) Water, tap
Directions
Sautee onions in olive oil at the bottom of the pot and add mushrooms. When soft, add remaining ingredients. Bring to a boil, then let simmer for an hour or two. I shredded the Brussels sprouts before adding.
