Sweet Korean-style Lentils

Ingredients
LENTILS1 c. (6.2 oz) red lentils 2 stalks green onion, diced1/2 yellow onion (3 oz. ) diced1 tbsp sesame seeds 1 tbsp safflower oil SAUCE2 c .water1/4 c. reduced sodium soy sauce2 TB packed brown sugar 2 cloves garlic , minced1" ginger root , peeled & minced1 tsp sesame oil 1/2 tsp crushed red pepper flakes VEGETABLES2 tsp safflower oil1 tsp sesame oil 1 clove garlic , minced3 c. broccoli florets1 c. chopped carrots, sliced diagonally1 c. sliced water chestnuts
Directions
1. In a medium bowl, mix together sauce ingredients.

2. Saute yellow onion in oil until softened. Add lentils and sauce. Cover and bring to a gentle simmer until the lentils are cooked and tender and most of the liquid is absorbed, about 8-10 minutes.

3. Saute vegetables and garlic in oil until crisp tender.

4. Serve 1/4 lentils and 1/4 vegetables over rice, and sprinkle with green onions and sesame seeds.
