1 lb boneless skinless chicken breast, cubed 1 cup Brown Rice 1 cup mashed Zucchini 1 cup chopped Swiss Chard 1 cup carrots frozen crinkle cut 1 1/2 TBS Garlic minced 1.5 cup frozen Pepper Stir Fry green/red/yellow pepper/onions (lightly chopped to your liking)1.5 cup tap water 1 1/2 TBS Mrs. Dash Southwest Chipotle 1 cup kernels Yellow Sweet Corn, Frozen
Preheat the oven to 425 degrees F.
Add the rice to an oven proof casserole dish.
Prepare the vegetables and add to the rice.
Add the water.
Cube the chicken and add to the pot.
Mix well and cover. Bake an hour or until the rice is tender.
