Ingredients
10 slice (1-3/8" dia x 1/8" thick Pepperoni 1 cup, sliced Zucchini 5 serving Cherry Tomatoes, Fresh, 1 Tomato 1 tbsp Extra Virgin Olive Oil
Directions
Slice zucchini into one quarter to 1 half inch slices and cherry tomatoes in half Toss in Italian season or pizza seasonings. Sandwich a pepperoni between two zucchini slices. Place Foil on a baking sheet with Zucchini sandwiches on one side and tomato slices on the other side. Roast at 400 degrees F for 5 minutes. Turn over the little Zucchini sandwiches and place one half a roasted cherry tomato on top. Return to oven for 5 more minutes
You can add cheese if you like at the first 5 minute point, I cannot have cheese so it is not included here in the calorie count.
