Ingredients
1 cup 365 Organic Quinoa 1 cup Parsley 100 grams Cilantro, raw 1.5 cup slices Cucumber (with peel) 1.5 cup, chopped or sliced Red Ripe Tomatoes 0.50 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 lemon yields Lemon Juice 1 tsp Salt .5 tsp Pepper, black 3 tbsp Extra Virgin Olive Oil
Directions
Cook quinoa according to pkg. let cool. Hope cilantro and parsley. Dice all veggies somewhat small. Add cilantro and parsley to bowl squeeze lemon and olive oil and let sit for 30 mins. Addall other ingredients. Let sit for at least 2 hours.
