Balsamic Chicken And Rice

1 3/4 cup long grain brown rice1 tsp olive oil1 tsp garlic powder1 lb chicken, boneless skinless breast, chopped2 tbsp olive oil1/4 cup chopped onion3 garlic cloves, finely chopped1 cup zucchini, chopped3/4 cup bell pepper, chopped5 tbsp balsamic vinegar1 tsp basil1 tsp oregano
cook brown rice with 1 tsp olive oil and garlic powder according to rice package instructions.
chop vegetables and chicken. put 2 tbsp olive oil, garlic and onions in frying pan.
place thawed chicken on a plate and add 3 tbsp of balsamic vinegar, basil, oregano and a dusting of freshly ground black pepper. mix with the chicken and allow to set for a few minutes.
add zucchini and peppers to frying pan and turn burner on medium. When pan is hot, add chicken. cook chicken until cooked through.
Add fully cooked brown rice to frying pan with 2 tbsp balsamic vinegar and stir together.
serves six.
