Caramelised bacon split-pea soup

Ingredients
2 cup dried uncooked split peas (by PSLUVSHORSES) 200 grams Canadian Bacon 5 medium (2-1/2" dia) Onions, raw 3 cup Chicken stock, home-prepared 1 cup Parsley 6 tsp unpacked Brown Sugar
Directions
Brown onions with bacon, adding brown sugar as the onions sweat. Then add 3 cups homemade chicken stock. Stir in dried split pea. Simmer for 1 hour or until split peas are soft.

Serving Size: Makes about 2.5 kg or 8 servings
