Kelly's Homemade Keto Whole Egg Mayo

Ingredients
2 large fresh whole Eggs1 tsp Dijon Mustard 1 tbsp Lemon juice 1 tbsp Apple Cider Vinegar Dash of tsp Himalayan Pink Salt1/4 cup light Olive Oil 2/4 cup 100% Pure Rice Bran Oil
Directions
Place the eggs, the oils, the lemon juice, apple cider vinegar, salt and Dijon mustard into a tall container large enough to fit in the stick blender.

Blend on high for 10-15 seconds without moving the blender. Then when the mixture starts to emulsify, move the blender up and down until the mixture reaches a thicker mayo consistency.

Pour into a jar (with a lid) and store in fridge. Yummo!
