1 tbsp Extra Virgin Olive Oil 9 oz boneless Chicken Breast, raw, long chunks 1/2 cup sliced Onions, raw 500 grams Broccoli, fresh141 grams Mushrooms, fresh1 tsp Sesame Oil1/2 cup warm to hot water1 serving low Sodium Free Chicken Bouillon3 tbsp Low Sodium Soy Sauce 2 cup, spiraled Zucchini (1/4 tsp ginger)Any amount of chicken from 9 oz to 1 lb will work with this dish. Add less or more meat, mix Asian frozen or snap peas works too.
Heat oil in a pan and saute chicken, add onions and stir.
Steam broccoli in micro a few minutes after cleaning to speed cooking up (or use frozed and just strain water). Add soy sauce, sesame oil and the bouillon. (can also add ginger) and the mushrooms. Mix and stir for bit until the broccoli is almost tender. Simmer uncovered to evaporate the liquid. The original, not keto, had 2 tsp of cornstarch.
Then add the Zoodles and stir and simmer for a little bit more. Not too long or the zoodles become mushy.
Serving Size: 3 servings
