1 tbsp Extra Virgin Olive Oil 10 oz Beef, Ground Beef 85/15 from Round 0.50 cup, chopped Onions, raw 0.50 cup, diced Celery, raw 2 clove Garlic 15 oz can Hunts Diced Tomatoes w/ Basil, Garlic & Oregano10 oz bag frozen Green Beans 1 cup homemade vegetable broth 1 tsp basil/oregano or blend of Italian seasonings5 oz frozen Kale The meat can be little meatballs too for fun and can be made with ground chicken, turkey or a combo or any.Kale can be swapped for spinach, swiss chard or left out, just adds more nutrients.Option to top with any variety of shredded cheese and treat like cheeseburger soup.Green beans can be swapped for slices or chunks of zucchini.
Heat olive oil in a medium pot and saute the meat. Can add the onions, garlic and celery or transfer meat to another pan. Saute till translucent.
Stir in the broth, tomatoes, veggies and spices. Bring the contents to a boil, then turn the heat down to low.
Add the chopped kale a few minutes before serving.
Add the salt and pepper to taste and adjust seasonings as needed.
Serve topped with Parmesan or other hard cheese
