Cauliflower Lasagna (S) Makes 6 large portions

Ingredients
4 cup riced cauliflower, cooked 3 1/2 cups mozzarella, shredded low moisture part-skim1 cup egg whites1 1/2 cups cottage cheese Daisy 2% 6 TBSP Parmesan Cheese, shredded 16 oz Venison, ground or ground turkey - cooked and drained3 cups spaghetti sauce (no sugar added)
Directions
Preheat oven to 350 degrees. Grease 9x13 inch pan. Mix cauliflower, 1/2 of mozzarella cheese, egg whites in a bowl. In a small bowl, mix cottage cheese and parmesan cheese. Layer 1/2 of spaghetti sauce in baking pan. Then add a layer of the cauliflower mixture, and then add cottage cheese/parmesan mixture. Top with 1/2 of cooked ground meat. Repeat layers and then top with remaining mozzarella cheese. Bake for 55 min. Let sit for 15 min. before serving. You may add additional seasonings such as garlic, onion powder, and Italian seasoning or basil. Season according to preference.
