Improv Vegetable Curry

4 tbsp Butter, salted 1 large Onions, raw 6 clove Garlic 0.75 tsp Ginger Paste Gourmet Garden (by BUNNY_SHAWE) 1 head, medium (5-6" dia) Cauliflower, raw 2.5 stalk Broccoli, fresh 3 cup Spinach, fresh 2 cup Great Value Diced Tomatoes (in Tomato juice) 1.5 tbsp Heavy Whipping Cream 2 tbs Cilantro
Melt butter in large skillet. Add onions, garlic, ginger paste, salt, curry powder, garam masala, coriander, cumin, turmeric and cayenne. Let cook until onions become translucent. Add broccoli, cauliflower and canned tomatoes. Cook until vegetables are tender. Stir in spinach and cilantro until wilted. Splash in cream and mix. Serve with basmati rice.
