Ingredients
2 cups Penne Rigate pasta14.5 oz. can of diced tomatoes with basil, garlic, & oregano10 oz package of fresh spinach6 oz. of Neufchatel Cheese1 tsp. crushed red pepper flakes1/2 tsp. nutmeg
Directions
1. Boil pasta according to package directions. Drain, put back in pot, turn heat to medium/low.
2. Add can of diced tomatoes and red pepper flakes, heat through.
3. Cut up 6 oz. neufchatel cheese and stir it in, melting it into a sauce.
4. Add nutmeg.
5. Add the spinach one handful at a time, stirring it in and wilting it, until all the spinach is used.
6. Serve and enjoy! makes 5 servings

    Thanks for posting this. It's one of my favorites. I bought all the ingredients but lost the recipe. You saved my dinner tonight! This is so yummy and doesn't taste low-cal at all. My kids LOVE it! One tip: chop the spinach before adding to the pot. - 5/7/09

    Delicious dish. I did add a few green olives and topped it off
    with some Homemade Basil Pesto. Used fresh tomatoes, garlic flakes, and oregano. So good. Will be making again. - 9/24/10

    I LOVED this recipe! I only put half the red pepper and it was perfect on the spice for me. The next time I make this dish we will be added grilled chicken breast. Leftovers the next day were great! - 7/30/11

    This is so simple and tasty. I used whole wheat penne and only 1/8 tsp nutmeg (might leave it out entirely next time). You might want to reserve some pasta water to help wilt the spinach, as the mixture gets a little thick with 10 oz of fresh spinach. Next time I might used thawed frozen spinach. - 12/6/10
