Sweet Potato Tortilla

Ingredients
375 grams Sweet potato baked in skin8 eggs225 gram Egg Whites 1.5 cup, chopped Onions, raw 5 clove Garlic 3 medium (4-1/8" long) Scallions, raw 1 tbsp Extra Virgin Olive Oil
Directions
Boil the sweet potato and cut it into slices. Carmelize the onions in a seasoned cast iron skill with the olive oil. Add garlic and scallions, brown, then add eggs and layer in sweet potato. Bake for 20-30 minutes at 350 until the egg is cooked through
