Ham and Vegetable Chowder

Ingredients
8 oz Ham, regular diced3 medium Potato, diced1/4 cup, chopped Onion1 tbsp Olive Oil1 tbsp Butter, salted2 tbsp All purpose flour4.0 cup (8 fl oz) Chicken Broth2.0 cup (8 fl oz) Water, tap2.0 cup Milk 2%3.0 cup Green Giant Frozen Mixed Vegetables1.0 tsp Thyme, fresh
Directions
Heat oil and butter in a large pot over medium heat. Add onion and saute until soft, about 5 minutes. Add flour and cook another 2 minutes. Slowly add broth deglazing the pan. Add water, potatoes and thyme. Simmer for 10 minutes. Add ham, frozen veggies and milk. Bring back to a simmer for about 10 minutes. Test potatoes to see if they are cooked through.
