Basic Low Carb Breakfast Hash

Ingredients
4 cup celeriac (celery root) , peeled & cubed, 1/4 to 1/2-inch2 cups, chopped Onions12 slices thick-cut bacon, cut into lardons2 tbsp Extra Virgin Olive Oil 6 pats (1" sq, 1/3" high) Butter, unsalted 2 tsp Pepper, black 1 tsp Salt
Directions
Saute celeriac in 1 tablespoon olive oil for 15-20 minutes, then begin sauteing onions in 1 tablespoon olive oil. When onions begin to caramelize, mix with celeriac and add butter. Continue sauteing and begin cooking the bacon. When bacon is halfway done, mix with onions and celeriac, adding salt and pepper as desired. Continue sauteing until bacon is as done as you like it.
