simple bechamel sauce

Ingredients
Milk, nonfat, 2.25 cup (remove)Butter, unsalted, .25 cup (remove)Flour, white, .25 cup (remove)Nutmeg, ground, .5 tsp (remove)
Directions
Heat milk in a microwave safe dish until just about to boil. While milk is heating, melt butter in a heavy bottomed sauce pan. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown — about 2 minutes. Add 2 cups of the hot milk, continuing to stir as the sauce thickens. Bring it to a boil. Lower the heat, and cook, stirring for 2 to 3 minutes more. Remove from the heat. Stir in the remaining .25 c milk and nutmeg slowly, using a wire wisk to thin sauce down a little bit.
To cool this sauce for later use, cover it with wax paper or pour a film of milk over it to prevent a skin from forming.

**salt and pepper can be added, if desired, for additional flavor. I find it doesn't need it, but everyones' tastes are different. garlic powder and parmesan cheese added turns this into a classic alfredo sauce. Adding a yellow cheese makes a nice mac n cheese base.
