1 tbsp Extra Virgin Olive Oil 2 cup Spinach, fresh 2 cup, pieces or slices Mushrooms, fresh 2 clove Garlic 8 large Egg, fresh, whole, raw 2 serving Cogruet Natural Sliced Cheese Swiss Lactose free per slice
Preheat oven to 400 degrees. Grease a glass rectangular lasagna pan with 1 tablespoon of olive oil. Chop about 2 cups each spinach and mushrooms and toss in. Dice 2 cloves of garlic. Beat 8 eggs and pour over and mix together. Rip up 2 of the cheese slices and lay evenly on top, nestling them in a bit to the egg mixture. Bake for about 20-30 minutes, basically until it looks done.
