Delicious Smoked Salmon w/Pasta

2 c. Whole Wheat Spaghetti, cooked4 Tbsp. White Onion, chopped1 Tbsp. Extra Virgin Olive Oil1 Roma Tomato, diced (remove guts)1 Tbsp. Cilantro, chopped1 clove Garlic, chopped3 oz. Smoked Salmon, shredded2 Tbsp. Parmesan Cheese, shredded
Cook spaghetti according to directions on box.
In a skillet, sauté the onions with olive oil until almost soft. Add the tomato and cilantro; cook for another minute. Then add the garlic and salmon; cook an additional minute to warm the salmon and meld the flavors. Serve over the spaghetti with a little parmesan cheese sprinkled on top.
Also, good over fresh spinach leaves instead of pasta. This will help cut calories!

very yummy. I altered it slightly. Doubled sauce and pasta to serve 4.
used 1 cup chopped spinach (didnt have basil or cilantro) I did not double the salmon (only used 3 oz). Added water to make more sauce and meld flavors.
Added 2 heads of broccoli florets to the pasta as it cooked. - 7/30/11
