Blueberry Kashi Muffins

2 cups of white flour2 tablespoons baking powder1/2 cup splenda granular1 small banana1 large egg3/4 cup fat free half and half1/2 cup unsweetened applesauce1 pint blueberries1/4 cup kashi go lean crunch, crushed
Makes 12 individual muffins
Preheat oven to 350 Spray muffin tin with nonstick spray or line with liners
In a bowl, mix flour, splenda, and baking powder
In another bowl, mash up banana, add egg, half and half, and applesauce. Combine well.
Add wet ingredients to dry. Stir just until combined - lumps are ok.
Fold in blueberries
Put in muffin tins, about 2/3 of they way up. Sprinkle tops of each muffin with crushed kashi cereal.
Bake 25-30 minutes until toothpick comes out with a few crumbs but not wet.
Cool for 10 minutes
Remove from pans, cool completely (or enjoy warm!)
