Pesto Chicken Zoodle Mozzarella Bake

1 lb chicken breasts12 tbsp Pesto Sauce (Aldi) = 1 jar3 medium zucchini, baby 8 oz fresh mozzarella cut into small pieces2 Roma tomatoes (chopped)2 tbsp pine nuts (crushed)
~Preheat Oven to 350 degrees~
1. Cook chicken breasts (I prefer to use InstaPot)
2. Shred chicken breasts (with Kitchen Aid Mixer)
3. Add jar of Pesto sauce and mix in with chicken
4. Spiralize zoodles and saute in pan with EVO for a few minutes
5. Spread zoodles into 9x13 glass baking dish and add chicken/pesto mixture; take tongs and gently mix these together
6. Top with mozzarella cheese, tomatoes
7. Sprinkle pine nuts on top
8. Bake for about 10-15 minutes (or so); long enough to melt cheese
