Duck Stew

Ingredients
2 cups Duck, chopped or diced1 cup chopped Carrots1 med Onions, chopped1 cup white Beans, canned or soaked, drained1 Chicken Broth1 cup Diced Tomatoes w/ juice3 cloves Garlic, minced1-2 tbl Olive Oil
Directions
Saute onions in oil until translucent. Add garlic, carrots, and duck meat, saute 1-2 minutes longer. Add remaining ingredients. Cover and simmer for 45 minutes to an hour, until carrots and beans are tender.
