Shrimp Scampi for HMR Diet

Ingredients
.5 serving Brown rice (1 cup cooked) 1 1tsp Olive Oil .3 tbsp Kerry gold salted butter 8 oz Shrimp, raw 8 oz Kirkland Chicken Stock 2 clove Garlic
Directions
Cook the brown rice according to instructions. Substitute the chick stock for a portion of the water. When the rice is done, cover it and let it rest off the heat. Heat the olive oil and add the Kerry Gold butter until the pan shimmers. You can add 2 cloves of garlic (chopped) at this step. Dry the shrimp so there is not any unnecessary water during the cooking process. Add the shrimp to the oil/butter and cook until pink (do not overdo it), flipping as needed to ensure the taste is good. This makes two servings; plate the rice and top with the shrimp. Add 1-2 cups of prepared vegetables and you have an excellent substitute for a prepared HMR meal (there's about an extra gram of fat in here - don't fret about it). :)
